There are a number of ways to do this:
1. Enhance>Convert To Black And White. Select the preset that looks best and then tweak it with the sliders. Click OK. With the new B&W photo in the workspace, you can tweak it using Enhance>Adjust Lighting>Shadows/Highlights or Levels.

2. Image>Mode>Grayscale

3. Enhance>Adjust Color>Hue/Saturation. Slide the Saturation slider all the way to the left.

Oh so they use Flash player to make videos, didn’t know.
It’s called Macromedia flash, search it in google.
